Simple Ingredients For ‘Souper’ Flavor

Beef: Use 80/20 or 80/10 ground beef, and skim off the fat to prevent the soup from becoming greasy. Short on time? Toss in a bag of frozen meatballs and make it a one-step recipe! Switch out the beef for chicken or turkey.

Vegetables: Cauliflower makes this soup nutritious and hearty. Onions, carrots, celery, and green beans round out the soup.

Soup: Beef broth and a can of tomatoes make a rich and beefy broth. Use a can of Rotel tomatoes with added green chiles and spices if you like! DIY your own Italian seasoning and have extra on hand for casseroles beef sandwiches.

Stir in Your Own Style

Try using ground turkey or chicken in place of beef. Feel free to add cabbage, mushrooms, peas, corn, zucchini, or keto veggies. Chopped bell peppers taste great, too. Garnish each bowl with a dollop of sour cream for a creamy soup or add a sprinkle of bacon bits and shredded cheddar cheese. Add some salsa or a few red pepper flakes for a spicy kick.

How to Make Hamburger Vegetable Soup

  1. Cook ground beef with onion and garlic. Drain off excess grease (full recipe below).
  2. Add the remaining ingredients to the pot and bring the soup to a boil.
  3. Simmer until the vegetables are tender, about 15 minutes.

‘Souper’ Ways to Serve and Store

  • This keto hamburger soup recipe already has meat and veggies so all you need is a bright and tangy cucumber radish salad, and some cloud bread or keto crackers for a crunchy topping.
  • Serve from a crockpot or slow cooker to keep it warm, and let guests help themselves.
  • Dip or crumble in some tasty mozzarella cheese crisps as a delicious topper.
  • Keep leftover soup in an airtight container in the refrigerator for 3-4 days. Reheat on the stovetop.
  • This soup freezes well. Store portions in zippered bags or freezer-safe containers for up to a month and thaw overnight in the refrigerator before reheating.

  15. This looks so delicious. I can’t wait to make this! My question for you is can this be frozen? I like making large batches and freezing things for another day and I would love to be able to do that with this.

    1. Hello Shirley. Yes this soup can be frozen. It will keep for 2-3 months in the freezer. I hope that helps.

  16. I knew I was going to love this just from the reviews. I followed the recipe you suggested and of course it was fabulous! I actually made a triple batch of this because I am starting my keto diet and it was the perfect opportunity. I used fresh green beans so it had to cook a whole lot longer but it was worth the effort. I had 2 huge pots and after all cooled, I bagged it in zip lock freezer bags and froze it. Oh and in the end, I actually added a package of bacon crumbles to the mix. I think this would be good with a few pepper flakes as well. Thank you for this amazing recipe!5 stars

  17. I used frozen vegetables. The soup was excellent. Lots of flavor. My son even liked it and he is a very picky eater. Going to make again.5 stars

I made a double batch this time but this will be a soup that will be in my daily regimen for my keto diet. Getting ready to make it again!5 stars
